Cochon Butcher - is the perfect sibling to Cochon (the restaurant) - light - airy - simplified menu - lunch - to go - while still maintaining the excellence of the original - including the brown spirit bar -
From a sandwich menu that included - muffaletta (house made meats, provolone,pickled peppers + olives) - cuban - 'the gambino'(salami cotto, sopressata, coppa+ fresh herb vinaigrette ) - opted for BBQ pork -
Ordered with diet coke - "large" - manager offered two small bottles - holding one in the counter - keeping it cold "until wanted" - that extra touch of service -
Sandwiches were made fresh - professionally - behind the counter - none of the usual slap together of a metro sub shop -
Pulled pork overflowed the round bun - nicely crusted - particularly in a city of maximum humidity - meat was moist not wet - mild spice quickly augmented by the house hot sauces - but after a few bites - chose to go it as it was served -
