We Know Where 2 Go

Frank Bruni's lead article - today's (02/27/08) New York Times - Dining Section - Coast to Coast, Restaurants That Count - details his visits to - 15 acclaimed, ambitious, promising or intriguing new restaurants...coast to cost...excluding New York City -

Included in the top 10 - Cochon - which liberates Cajun cooking from its deep-fried clichés. With its stylishly casual vibe, fatty abandon, worship of pork (cochon is French for pig) and fervent devotees, it’s a Momofuku on the Mississippi -

Almost making the cut - Lüke - the chef John Besh’s brasserie in New Orleans -

Scorecard - 2 of the 15 - "already" written of in Red Is Life  - Cochon (10/21/07) & Lüke (9/30/07) - i.e. - its fun to "compare" notes -

FEMA Shame

The CDC confirmed (02/14/08) that FEMA trailers provided as temporary housing to Katrina victims were impregnated with unacceptable levels of formaldehyde - six months after it was revealed that FEMA lawyers blocked testing for fear of agency liability - i.e - the storm may have cost them their homes - FEMA may have cost them their health - via Associated Press -

Matteo

Matteo showed up with his date - 11:00 Thanksgiving evening - having just finished cooking the gazillionth Thanksgiving Dinner serving at PJ's -

The un-seasonably warm night found us sitting outside - polishing off a bottle of Sazerac - winding down -

Pulled a plate together for the just arrived Chef - Carrot Soup - BBQ Turkey - Dressing and all the Sides - he was quickly up to speed -

A spectacular bottle of Caymus Cabernet Sauvignon Special Select 1994 was opened - new guests - new wine - a touch of cognac - more wine - the evening had gotten its second life -

I crashed at 2:00 AM - my understanding was that Mateo and a few other latecomers kept going until about 3:30 or 4:00 - a night we were to reminisce on - for years to come -

You Can't Write Fiction This Good

Next time you want to open Chateau Petrus - but can't find a corkscrew -

Find a towel and a smooth wall. Wrap the base of the bottle in a towel. Hold the bottle horizontally and proceed to rhythmically pound it base -first against the wall.

Be firm, not violent. As the wine sloshes forward with each impact, it will squeeze into the neck of the bottle, creating a primitive water hammer. The cork will eventually be driven out far enough that you can grab it and finish the job manually.
